Understanding by Design is a framework often described as "backward planning" style of course design. The designer begins by focusing on the end. Have a firm grasp of clearly stand end-goals helps keep the content focused and the course on track for meeting those goals.

Having these end picture in mind helps limit the overwhelming amount of resources and information by offering a clear scope. The same is true for identifying the means of instruction.

In short, UbD is a great way to keep the end goal in mind without getting sidetracked with the seemingly endless flow of options available.
